Vegetable Fried Rice + Teriyaki Pork Tenderloin

One of my major goals is to cook at home more this year.

I love eating out, but I know cooking can be healthier and save me money as one dinner can turn into leftovers for lunch the next day. My other goal is to cook simple meals ready in 30 minutes or less so I’m not slaving away in the kitchen on a weeknight trying to come up with some sort of gourmet meal.

I’m looking for real flavor, real fast.

I am definitely more leisurely about cooking on the weekend and use that time to tackle more complex recipes or get some meal prepping done. However on weeknights, I’m usually just getting back to gym and I want to eat something fast and healthy so I can have some down time before getting ready for bed.

It’s really easy to resort to take-out when you don’t have a meal planned. Which is why I always head over to the fresh meat department at my local Safeway to pick-up something I can easily build a meal around. I like to have a protein, a carb and a green vegetable when I can.

This quick and easy vegetable fried rice recipe satisfies my Chinese take-out cravings and you can even cook and chill the rice the night before or on the weekend – so all you need to do is fry everything up right before dinnertime.

Smithfield’s Marinated Pork is perfect for pairing with this fried rice recipe and makes for a quick and simple meal. I chose Smithfield Sweet Teriyaki Pork Tenderloin from my local Safeway. There are a variety of cuts and flavors to choose from including Roasted Garlic and Herb, Applewood Bacon, and Garlic and Cracked Peppercorn.

I like to multi-task a bit when I’m in the kitchen. While your rice is cooking, your pork tenderloin roasts up in the oven. Pop some broccoli for a quick steam for a healthy green side dish and you have dinner that is ready in 30 minutes or less.

The pork is also pre-marinated with a dry rub and seasonings, so there’s little prep work to be done – which is perfect when you’re just trying to get dinner on the table. You also won’t find any artificial ingredients this pork tenderloin.

Vegetable Fried Rice + Sweet Teriyaki Pork Tenderloin

serves 4-6

 

INGREDIENTS

  • Smithfield Sweet Teriyaki Pork Tenderloin
  • 3 tablespoons butter
  • 2 eggs, lightly beaten
  • 1 small onion, chopped
  • 1 cup frozen peas + carrots mix, thawed
  • 2 cloves garlic, finely chopped
  • 4 cups leftover rice, chilled
  • 2 tablespoons soy sauce or tamari
  • 2 scallions, finely chopped
  • 1 tablespoon toasted sesame oil
  • 2 cups steamed broccoli

 

PREPARATION

  1. Preheat oven to 425F
  2. Place pork tenderloin in the oven and follow package directions until cooked
  3. In a small non-stick frying pan, add 1 tablespoon of butter over medium-high heat. Add eggs and scramble for 2-3 minutes until fully cooked. Remove from heat and set aside
  4. Heat remaining 2 tablespoons of butter over medium-high heat in a large non-stick pan or wok
  5. Add onions, peas + carrots mix and garlic to hot pan and cook for 5 minutes until onions look soft. Stir every 1-2 minutes.
  6. Add cold rice and break up with a spoon in the pan for about 2 minutes
  7. Add green onions, tamari or soy sauce, sesame oil and stir-fry for another 2 minutes until heated through
  8. Season with salt and pepper, add cooked egg and mix well
  9. Remove from heat and garnish with additional green onions if you’d like
  10. Serve rice with sliced pork tenderloin and steamed broccoli on the side
